  • mexican chorizo12 oz
  • refried beans1 can

  • romaine lettuce½ head
  • sour cream½ cup
  • red salsa½ cup
  • vegetable oil3 tbsp

Instructions

  1. 1

Mix masa harina with 1 1/3 cups warm water and 1/2 tsp salt into a soft dough. Divide into 8 balls and press each into a 3-inch round about 1/4 inch thick.

Brown the chorizo in a skillet over medium heat, breaking it up, 7-8 minutes. Warm the refried beans in a small pot.

  4. 4

Fry the sopes in oil, rim-side up, 1-2 minutes until the bottoms are crisp.

  5. 5

Spread each sope with beans, then top with chorizo, shredded lettuce, crumbled queso fresco, crema and salsa.
