  • plain breadcrumbs½ cup
  • eggs1 count
  • lemons2 count
  • dried oregano2 tsp
  • olive oil4 tbsp

Instructions

  1. 1

Heat the oven to 450°F. Cut the potatoes into wedges, toss with 3 tbsp oil, the juice of 1 lemon, 1 tsp oregano, and salt, and roast on a sheet pan for 30 minutes, flipping once.

  2. 2

Meanwhile grate the onion and mix it with the beef, pork, breadcrumbs, egg, chopped mint, remaining oregano, 1 tsp salt, and pepper.

  3. 3

Roll into 1.5-inch balls and slightly flatten them.

  4. 4

Fry in 1 tbsp oil in a large skillet over medium heat, about 4 minutes per side, until browned and cooked through (160°F).

  5. 5

Squeeze the remaining lemon over the meatballs and potatoes before serving. Kids love these with ketchup or plain yogurt.
