Ingredients

  • ground turkey1ΒΌ lb
  • long grain white rice1 cup
  • black beans1 can
  • diced tomatoes with green chiles1 can
  • chicken broth2 cups
  • taco seasoning2 tbsp
  • frozen corn1 cup
  • shredded cheddar cheese1 cup
  • green onions1 bunch
  • olive oil1 tbsp

Instructions

  1. 1

Heat the oil in a large deep skillet over medium-high heat. Brown the turkey 5-6 minutes, breaking it up, then stir in the taco seasoning.

Add the rice, broth, tomatoes with their juice, rinsed black beans, and corn. Stir and bring to a boil.

  3. 3

Cover, lower the heat, and simmer 15-18 minutes until the rice is tender and most of the liquid is absorbed.

  4. 4

Turn off the heat, sprinkle the cheese on top, and cover 2 minutes to melt.

  5. 5

Top with sliced green onions. Set out sour cream, salsa, or crushed tortilla chips so everyone can build their own bowl.
