Ingredients

  • beef chuck stew meat1½ lb
  • vegetable oil1 tbsp
  • yellow onions2 count
  • carrots3 count
  • Yukon gold potatoes2 count
  • Japanese curry roux½ package
  • honey1 tbsp
  • short grain white rice1½ cups
  • salt1 tsp

Instructions

  1. 1

On Sauté, heat the oil and brown the beef for 5 minutes. Add the sliced onions and cook 3 minutes more.

  2. 2

Add the carrots and potatoes cut into chunks, 3 cups water, and a pinch of salt, and scrape the bottom clean.

  3. 3

Cook on HIGH pressure for 20 minutes, then natural release for 10 minutes. Cook the rice meanwhile.

  4. 4

Turn the pot off, break the curry roux into pieces, and stir until fully dissolved (adding roux under pressure can scorch).

  5. 5

Switch to Sauté and simmer 3-5 minutes, stirring, until thick. Stir in the honey.

  6. 6

Serve over rice. The mild roux is a great first curry for kids.
