Finely chop the cabbage, sprinkle with 1/2 tsp salt, let sit 5 minutes and squeeze dry.
Mix the pork, cabbage, chopped green onions, grated ginger, 1 tbsp soy sauce and the sesame oil.
Place a heaping teaspoon of filling on each wrapper, wet the edge, fold in half and pinch closed. This is a great job for kids.
Heat 1 tbsp oil in a large nonstick skillet over medium-high. Add half the dumplings flat-side down and cook 2 minutes until golden. Add 1/3 cup water, cover and steam 5-6 minutes until the filling is cooked. Repeat.
Slice the cucumbers and toss with 3 tbsp vinegar and a pinch of sugar. Mix the remaining soy sauce and vinegar for dipping.
